Hello all,

Let’s talk about salads! I personally love them, especially for lunch and to be honest often for dinner. I know, I know: “of course you love them, you’re a dietitian”… Well, maybe that’s true or maybe I just make a mean salad! I like to believe it’s the latter.

Salads are one of the most versatile options out there and I genuinely believe if you dislike salads you just haven’t met the right one yet.

My salad staples are:

[a] some green leafy vegetable (lettuce, spinach, spring mix, arugula)
[b] bell peppers and cucumbers (or just one of them)
[c] a fruit (strawberries, mangoes, clementines, blueberries, pears, apples, any fruit basically)
[d] a little bit of feta cheese (sometimes I’ll switch it for goat cheese)
[e] a protein if it’s an entree salad (hard boiled eggs, chicken breast, shrimp, or salmon are my favorites)
