I was visiting my family last weekend and found out that my brother has decided to try going vegan for a bit (or maybe forever, only time will tell). I cooked lunch one day and wanted to make something for him (since lunch was the Oven Fried Chicken recipe I shared a few weeks ago).
I ended up making this yummy salad! It tasted super fresh and took very little time to make. It’s a great lunch option alone or could be served on the side with whole grain bread or crackers.
*sahtain is the Arabic ‘bon appetit’, it literally translates into ‘may you have double the health’ but generally means ‘enjoy your meal’
